One Minute Chocolate Chip Cookie
My granddaughter Riley and I tried a recipe I found for a single-serving chocolate chip cookie. Simple to make in no time at all. The hardest part was waiting for it to cool down enough to take a bite. You could come up with many variations for this, with a little creative thought. I have done many cupcakes in a cup/mug, but this was my first cookie….Go ahead, Give it a try!
Ingredients:
1 T. butter, melted
1 T. white sugar
1 T. brown sugar
Few drops of vanilla
Pinch of salt (I omitted)
1 egg yolk
¼ c. flour
2 T. chocolate chips
Mix melted butter, sugars,egg yolk, and vanilla.
Add in flour and salt. Mix until combined. Add in the chips.
Put the dough in a microwaveable bowl, ramekin, or coffee mug. (An NBXpress coffee mug would really work well) Microwave for 40-60 seconds or until the cookie looks done. Best served warm.

Looks like someone found a few extra chocolate chips to nibble on while waiting for their cookie to cool....

Next time I am going to use the whole egg and only bake 45 seconds. One minute was a little too long in our microwave (850 watts)
