Briar Hill Chef Sue Smith Competes In Culinary Olympics

Briar Hill's dining services team recently competed in the Trilogy Health Services Culinary Olympics, showcasing their culinary skills and presentation abilities. The competition is held annually, first at the divisional level in each of Trilogy’s seven divisions. The Divisional winners then advance to the Culinary Olympic finals.

Each team had the opportunity to plan their own signature menu composed of a salad, entree and dessertwhich was judged by a volunteer panel to select gold, silver and bronze team medalists. Additional awards were presented for each category: Salad, Entree and Dessert as well as the overall winner based on the combined scores.

Criteria for judging included use and application of fresh, seasonal ingredients, creative flair, plate presentation, portion control and nutritional value and overall flavor profile. The prepared food represented actual meals that residents are served.

While the Briar Hill team did not take home a medal this year, the event was still a huge success for

the team who prepared a delicious menu including: Grilled Tenderloin, Grilled Shrimp,

Twice Baked Potato w/Pancetta and Asiago Cheese, Roasted Asparagus, Chocolate Peanut Butter Poke Cake w/Strawberry Garnish

“Our dining service team, led by Sue Smith, has exceptional talent,” said Valerie Wallen, Executive Director of Briar Hill Health Campus. “Our residents appreciate the care and dedication they put in to each meal – ensuring our residents have a great selection and variety from which to choose. We applaud them for their great effort in our Culinary Olympics.”
